Chef Fernando Pérez Arellano's tasting-menu restaurant, which started in Madrid in 2005 before moving to Mallorca, first at Castell Son Claret near Es Capdellà and now inside the Es Príncep hotel in Palma's old quarter, with its own separate entrance and a dining room set over the remains of a former tannery. The cooking is contemporary Balearic, leaning on local meats, fish and produce, served through two tasting menus ('A flor de piel' and 'Plena flor') across a sequence of rooms, with wine pairings offered alongside each.

Background

About Restaurante Zaranda

The Story

Zaranda started in Madrid in 2005, where chef Fernando Pérez Arellano picked up a Michelin star within a year. He then moved the restaurant to Mallorca, and at Castell Son Claret near Es Capdellà it earned two stars in 2016. Today Zaranda lives inside the Es Príncep hotel in Palma's old quarter, with its own separate entrance. The current dining room sits over the remains of a former tannery, and the experience is built around that heritage.

The Cuisine

Arellano cooks contemporary Balearic, leaning hard on local meats, fish and produce. The format is tasting-menu only: two options, 'A flor de piel' and 'Plena flor', both served across a sequence of rooms rather than at a single table. Expect a long, multi-course meal. Wine pairings are offered alongside each menu.

The Team

The kitchen is led by chef Fernando Pérez Arellano, who founded Zaranda and has run it through all three of its homes. He works closely with Balearic producers for the meats, fish and produce that anchor the menus.
