Fernando Pérez Arellano is a self-taught, Madrid-born chef, born in 1978, who leads the kitchen at Restaurante Zaranda, now inside the Es Príncep hotel in Palma de Mallorca's old quarter. He trained across a run of well-regarded European kitchens, including Patrick Guilbaud in Dublin, Le Gavroche in London, Don Alfonso 1890 in Naples, Maison Pic in Valence, and Can Fabes, before opening his own restaurant, Zaranda, in Madrid in September 2005, which earned a Michelin star within a year. He later relocated Zaranda to Mallorca, first to the Hilton Sa Torre, then to Castell Son Claret, where it earned a second Michelin star in the 2016 guide, at the time the island's only two-Michelin-starred restaurant. Zaranda closed in May 2020 when Castell Son Claret's ownership unilaterally ended the restaurant's contract during the Covid-19 pandemic, and Arellano reopened it inside the Es Príncep hotel in late summer 2021, where the Michelin Guide awarded the new location a star about three months later. Zaranda holds 1 Michelin star and 1 Repsol Sol at Es Príncep today, where Arellano cooks Balearic-rooted tasting menus built around local meats, fish and produce.
