The Story
Tampu takes its name from a Quechua word meaning inn or lodging. It started modestly in Prosperidad before relocating to Calle de Prim in Justicia, and its menu is told in narrative chapters that follow the chef's approach to Peruvian cooking. The room runs to a bar area, three private rooms and a main salon, in wicker, wood and warm gold.
The Cuisine
On the menu: mussels in mojito granita with sweet potato threads, ceviche offered in four variations, and a tamal carabinero. Tampu carries both a Michelin recommendation and Repsol recognition.
From Prosperidad to Prim
Tampu began in 2011 as a modest, family-style Peruvian restaurant in Prosperidad, near the Auditorio Nacional de Música. In 2016 it moved to Calle de Prim, on the Justicia side of Chueca, into a larger and more polished space, and the cooking moved with it towards more open fusion and more experimental dishes, with Valdiviezo pointing more often to the cooking of Peru's north.
The name is the Quechua word for a wayside inn, the tambos along the Inca roads where messengers, soldiers and officials could find food and shelter. The room has a bar at the entrance, a main dining room divided by a large mirror, and three private rooms of different sizes, all in wicker, wood and gold.
The Carta
The carta runs from single bites to mains, and reads like a map of Peru's influences, Chinese, Japanese, Italian, African and Spanish. The bites include a mussel with a ceviche cream of squid and prawns, mint granita and sweet-potato threads, a scallop with anticucho sauce, a zamburiña with coconut and ají charapita, a duck-rice bombita and a liquid ají de gallina croquette. Ceviches come four ways, including a classic, a green northern version and the Amazonian one, corvina in a turmeric and ají charapita tiger's milk with a patacón stuffed with avocado and green mango.
Beyond those, there's a Korean-style saam of Iberian pork belly and mussel wrapped in lettuce, a nikkei causa of bluefin tuna belly, nikkei crab, gnocchi in a basil tiger's milk with squid and guanciale, ají de gallina made the old colonial way with hen and pecans, magret in chepén sauce, corvina a lo macho, a traditional lomo saltado with Ávila beef, and a huatia of osso buco. Desserts include a lúcuma crème brûlée and a crema de suspiro with passion fruit. A seven-course tasting menu is offered alongside the carta, priced at €65 before drinks in 2024, with an optional wine pairing.
Pisco and Wine
The bar at the entrance is built around pisco, with one of the longest pisco lists in Madrid and cocktails that range from dry to aromatic, the pisco sour first among them. The wine list takes in Peruvian wines, Canary Island bottles and natural wines, chosen to stand up to the ají.

The Team
Chef-owner Miguel Valdiviezo trained in the first cohort of Le Cordon Bleu in Lima and sums up his cooking with a line of his own: a ceviche without ají is like a kiss without tongue. He opened Tampu in 2011 and cooks with ingredients brought from Peru, reworking the traditional recipe book into his own modern line without losing the flavour at its root.
