Miguel Ángel Valdiviezo is a Peruvian chef who trained at the Lima branch of Le Cordon Bleu before moving to Spain in the early 2000s. Biography
Early years
Valdiviezo grew up in Peru and got interested in cooking as a child watching television cooking shows, including Karlos Argiñano's, and says he knew cooking was his path by age 11. He trained at the Lima branch of Le Cordon Bleu around 2000, where his instructor Gloria Hinostroza, a food historian who also teaches at Lima's Universidad de San Martín de Porres, shaped how he thinks about Peru's colonial, classical, and contemporary cooking traditions.
Career
Valdiviezo moved to Spain in the early 2000s and began his career in Madrid at Inti de Oro, one of the city's established Peruvian restaurants, before working under chefs Jaime Renedo and Pepe Rodríguez. In 2011, he opened his own project, Tampu, in the Prosperidad neighbourhood, later moving it to Calle de Prim in Justicia. The restaurant was included among the Michelin Guide Spain and Portugal's recommended addresses in 2023. He also runs a second Madrid restaurant, La Cevicuchería, serving ceviches and anticuchos, and teaches Peruvian cooking classes.
Philosophy
Valdiviezo calls his cooking "of extremes," leaning on confited technique, and wants diners to slow down over each dish, closing their eyes and chewing to take in its flavour. He's spoken about Peruvian cuisine's own layered heritage, noting that "la gastronomía peruana tiene ADN español" (Peruvian gastronomy carries Spanish DNA): alfajores trace to Andalusian cooking, and he points to a theory that the word ceviche comes from the Quechua "siwichi" (fresh fish) filtered through Mozarabic Spanish. At Tampu, he pushes past internationally familiar Peruvian dishes to showcase cooking from Peru's provinces, interior, and jungle, and describes the restaurant as where he could finally put his own vision of Peruvian cooking into practice.
