Taberna Marcano is a contemporary Spanish restaurant in Madrid's Ibiza/Niño Jesús neighbourhood, run by chef David Marcano, who trained under Arzak. The Story

Taberna Marcano is a contemporary Spanish restaurant in the Ibiza/Niño Jesús area, built on product quality with Basque roots and Asian and American influences. It splits into a dining room and a bar with high seating overlooking the open kitchen, and has held a presence in the Michelin Guide since 2015.

The Cuisine

Seasonal and product-led, with fish as a particular strength. The carta opens with the house gildas, a croqueta of the week, ensaladilla with white prawn and leek mayonnaise, steak tartare on croissant bread with kimchi and quail egg, spicy tuna or prawn tartare tacos, a corvina acevichada and baos of squid or cochinita. From the sea come squid in its ink and a mixto of hook-caught hake with squid in ink, both following Juan Mari Arzak's recipes, red tuna tartare with a fried egg, wild corvina sashimi with ponzu and cod with a prawn carbonara. Meat runs from tripe, trotter and snout to veal cheek in port with parmentier and a white-veal shank cooked for 48 hours, for three.

Flavours That Stay With You

Marcano traces his cooking to his childhood: summers in Guadamur, the Toledo village where his grandparents lived, playing in the year-round vegetable garden and climbing the olive trees, and his family in Cantabria, who taught him to love fish. Arzak taught him what the trade really means, and over time he has added French, Japanese and Latin American touches to a Mediterranean base. He has run the restaurant on Calle Doctor Castelo, in the Retiro district, since 2012, and it has been in the Michelin Guide since 2015.

Weekly Suggestions

Alongside the carta runs a list of weekly suggestions that follows the market: albardada hake kokotxas from the Cantabrian, a braised pig's-trotter ingot in port with white prawn, squid stuffed with langoustines over verdinas, a hake caldereta with octopus, squid and prawns, morels stewed with port, Armagnac and foie, and in spring, white-asparagus pappardelle with egg and truffle or perrechico mushrooms with young garlic over a free-range yolk. There's also a rice of the day, a seafood rice and a pulse dish with denominación de origen.

The Team

David Marcano started training at 14. He learned in San Sebastián under Juan Mari Arzak, then cooked at the Hotel Santo Mauro and the Ciudad del Fútbol before taking charge of the kitchen at Goizeko Wellington at just 27. He's known for long cooking times and his command of fish.
