Early years
David Marcano studied at the Instituto de Formación Profesional María Zayas in Majadahonda and graduated from the Escuela de Hostelería y Turismo at Casa de Campo in Madrid.
Career
He trained for two years under Juan Mari Arzak at Restaurante Arzak in San Sebastián, a period he's called formative, and also worked at Hotel Santo Mauro and the Ciudad del Fútbol training complex in Las Rozas. He was head chef at Goizeko Wellington from 2004 to 2011, developing the Basque-influenced, product-driven cooking he later brought to his own restaurant. Marcano opened Taberna Marcano in 2012 and moved it two years later to its current address on Calle Doctor Castelo, where it has held a place in the Michelin Guide since 2015. He appeared on the fourth season of Top Chef Spain, chosen from thousands of applicants, and now runs the restaurant with his wife, Patricia Valdez.
