About Taberna Chiripa
The Story
Taberna Chiripa opened in 2025 in the small space on Calle de Espartinas that had been Taberna Verdejo. Partners Manuel Figueroa and Roberto Fuentes run the room themselves and brought in a young chef, David Blázquez, who had cooked at Umiko, Lera and Bom Amb. The house builds on home cooking, old-school bars and historic fondas, taken one careful step further, and its Instagram bio sums it up as classic creative cooking.
The Cuisine
The cooking is traditional Spanish with a creative edge: homemade tapas, sharing raciones, spoon dishes and seasonal specialities. House favourites include ajoblanco with quisquillas, a quail pastela and mollejas, with sauces the kitchen says take hours.
The Dishes
The carta is short and deliberately skips the city's usual suspects. It opens with an ajoblanco of Marcona almond with Motril quisquillas warmed in the kamado, pickles, trout roe and an oil made from the prawn heads. The 'bocado Chiripa' is crisp pig's ear and griddled cheek with smoked eel, garlic praline and lime gel. There's a cod ravioli with smoked turbot pil-pil, a heart sweetbread cooked low then finished over embers with celeriac cream and brown butter, and a marine figatell of monkfish and squid, a nod to Blázquez's time in Alicante. The 'Homenaje a Madrid' is a pastela of quail in pepitoria with a pâté of its livers, and the lemon tart has a crumble made with lamb fat.
