The Story
La Bistroteca opened in the Barrio de Salamanca in 2016 with a 'Feel & Eat' idea: burgers given a bistro's attention. The room borrows from New York, exposed brick and copper lamps, and part of the cooking is finished at your table.
The Cuisine
The kitchen is American, built on burgers made with Galician beef, each on its own bread, from the bacon-and-cheddar Bacón to the poached-egg-and-hollandaise Poché. The guacamole is made tableside.
Burgers and Starters
Starters set the bistro tone: guacamole made at the table in a volcanic-stone molcajete (extra torreznos optional), sweet-potato nachos with aged-cow stew, a free-range chicken ensaladilla with crispy Ibérico belly, ribeye and smoked pork-belly tacos, tequeños and rib croquettes with house barbecue sauce. Burgers run from about €17.80 to €25, among them La New York Cheese finished at the table with melted raclette, La 1982, a tribute to the founders' origins with sliced old-cow sirloin tataki and a potato-parmesan rösti, and La Palma, which won Spain's Mejores Hamburguesas Gourmet contest in 2021.
Practicalities
Open Tuesday to Saturday for lunch and dinner; closed Sunday and Monday, with a summer break in late August. Book through CoverManager from the restaurant's site. It marked ten years in 2026.
