The Story
Pacto Raíz, its name a nod to roots, sets out to represent the tascas and markets of both Spain and Latin America, flavours you might have found in a Peruvian market, a neighbourhood Casa Pepe in Spain, a Mexican street stall or a grandmother's kitchen. It's on Calle de Espartinas in Goya, the calmer end of Salamanca, in a rustic, informal room, and keeps later hours than the setting would suggest.
The Cuisine
Latin American and Spanish flavours in dishes meant for sharing, most available as half or full portions. The December 2025 carta runs from broccoli with kimchi and lime, an homage to Recreo, and aged picaña with Andean chimichurri to a sope of lacquered pork belly with ají amarillo and house 'Latin kimchi', a sardine rillette with smoked butter and huacatay, crispy pig's ear with fermented chillies, and a menestra with peanut salsa macha and poached egg. Ceviches include amberjack in a fermented-plum leche de tigre and warm bonito with ancho-chile leche de tigre and pineapple; there are prawns in spicy chilpachole, lacquered quail with aguadito broth, Iberian presa with mango-chilli chamoy, and beef tenderloin with lomo saltado sauce and tacacho. Desserts: a tres leches of sobao pasiego, spicy chocolate mousse with ají panca and blueberries in vermouth syrup.
From a Market Stall
The Pacto Raíz story starts with a stall in the old Mercado de Torrijos, where André, Alex and Santi, who had met at Barra M, began cooking together; the market has since disappeared, and the project grew into a street-level restaurant before this larger one opened at the end of 2024 on Calle de Espartinas. The four founders describe themselves as family after years in the kitchen together. The name is a nod to roots: the carta sets out to bring together the tascas and markets of Spain and Latin America, flavours from a Peruvian market, a neighbourhood Casa Pepe, a Mexican street stall or a grandmother's kitchen.
How to Order
Almost everything comes as a half or full ración, from €6.50 for half a plate of broccoli to €29 for a full ración of picaña or presa, so the best approach is to order several halves and share. Desserts are €8, and there's a cocktail list alongside.

André Chumbe, Alex Marugán
The Team
André Chumbe and Alex Marugán, owners and cooks, first worked together at Barra M in 2016 and met again two and a half years later to grow a small stall in the now-closed Mercado de Torrijos, which later moved to a street-level premises; the restaurant's own site links to its sister restaurant, Tres por Cuatro. Rocío Martínez joined when the kitchen needed to grow and is now manager and cook. At the end of 2024, wanting to keep growing together, they opened Pacto Raíz. The team includes Álvaro Suárez-Llanos in the kitchen and Belén Blasco and Pedro Baca in the dining room.
