Sala de Despiece 2 (SDD2) is the second chapter of Javier Bonet's Sala de Despiece, the ultramodern counter restaurant that changed Calle Ponzano in 2013. It opened in 2021 on Virgen de los Peligros, a step from Canalejas, as an improved replica of the first: a long bar where diners help finish creative, product-led plates, with Bonet's design store, Galería Comercial, wall to wall.

About Sala de Despiece 2

The Story

Javier Bonet (Palma de Mallorca, 1971) was a food-concept consultant before he opened the first Sala de Despiece on Ponzano in 2013: a futuristic take on the neighbourhood counter bar where diners got involved in finishing their plates, so popular there were fights over stools. He numbers his openings like chapters, and SDD2 followed in 2021 on Virgen de los Peligros, with the Galería Comercial concept store next door selling the group's own caps, sweatshirts, tableware and art collaborations. Sala Cero (SDD0) and its basement club Subcero opened on Ayala in 2024, and SDD1 moved from Ponzano to Alonso Cano that December, completing what Bonet calls a triangle across three neighbourhoods.

The Cuisine

Creative, product-led cooking in Bonet's playful style, with dishes finished in front of the customer at the bar. Across the group the carta has signature hits such as the 'Rolex', an overhead-grilled 'chuletón cenital', artichoke with caviar and langoustine with hollandaise, with prep from the group's central kitchen in Las Rozas.

The Format

The centrepiece is the long bar, with stools facing the cooks, in the bold colours customers now recognise as Sala de Despiece's. It's built for sitting close to the action rather than a quiet table. Drinks are kept simple: Bonet says the SDD restaurants don't bet on cocktails, beyond a few on tap as an aperitif, leaving the cocktail bar to Subcero.

Galería Comercial

Next door, Galería Comercial is the group's concept store, mixing art, design and food. Bonet insists it isn't merchandising but well-made objects: the restaurants have always made their own tableware and aprons, and the shop sells clothing and pieces made with artists.

Open every day: Monday and Tuesday 13:30 to 17:00 and 19:30 to 00:30, Wednesday and Thursday straight through from 13:30, and Friday to Sunday from 13:00, to 00:30. Book online through the Sala de Despiece website; Sevilla (L2) is the nearest metro.

Sol is the dead centre of the city and behaves like it, busy and walked through by everyone heading somewhere else. The trick is knowing which doors are worth stopping at, because rooms built for visitors sit right beside ones locals have used for decades.
