The Story
Chef Javier Bonet opened Sala de Despiece on Calle Ponzano in 2013, styled like a butcher's cutting room, with a menu printed like an invoice. In 2024 the Ponzano site closed and the restaurant moved to larger premises on Calle Alonso Cano, seating up to 60. Bonet has since opened a separate venue, SDD0, on Calle Ayala, growing the original idea into something closer to a small group.
The Cuisine
The signature Rolex is a low-temperature egg yolk crowned with pancetta, foie, truffle and Sauternes. Elsewhere: a chuletón cenital of three aged-beef slices with tartufata, tomato and premium olive oil, a lagarto of Asian eggplant stuffed with smoked herring, onion and pickled vegetables, and ternera escondida, beef sealed inside a fat sphere and flambéed tableside before landing in corn tortillas with pickles.
