Sala de Despiece SDD1 is chef Javier Bonet's original creative-tapas restaurant, opened on Calle Ponzano in 2013 and moved in 2024-25 to a larger space at Calle de Alonso Cano 28, still in Chamberí. It's styled after old market cutting rooms, all white with butchers' hooks and a counter of the day's produce, with bar and table service for about 60, and it's listed in the Guía Repsol.

About Sala de Despiece SDD1

The Story

Javier Bonet opened the first Sala de Despiece in 2013 on Calle Ponzano, as a homage to Chamberí's tapas culture, with the season's produce laid out along a counter where diners sat. It began with 11 stools and around 60 people squeezed in, and the team kept reinventing the format, with queues, reduced capacity and several enlargements. After Sala Cero opened on Calle Ayala in 2024, the original moved to larger premises at Alonso Cano 28, keeping the name SDD1. The architects yyplusplus split the project in two: the restaurant at number 28 and the Fundación del Producto next door at number 26, a shop, gallery and meeting space. It's listed in the Guía Repsol.

The Cuisine

Creative Spanish tapas: tapas-leaning plates on high-quality produce bought daily, served on wax-papered trays at communal tables, with a tasting menu on offer. Meat is the through-line, in Javier Bonet's carnivorous style, and the carta is on the group's own site.

The Group Today

Sala de Despiece has grown into a small family of addresses: SDD1 here on Alonso Cano, Sala Cero (SDD0) on Calle Ayala in Salamanca with the Subcero cocktail bar below, and SDD2 on Calle Virgen de los Peligros near Sol, which serves at the bar only. The cooking across them works on top-quality vegetables, fish and meat with surprising, original preparations, and the drinks list runs from whites and rosés to Japanese sake. Lunch is served daily (from 13:30 Monday to Thursday, 13:00 Friday to Sunday) and dinner every night from 20:00.

A space built to look like an old market cutting room: white throughout, staff in butchers' aprons, knife cabinets, hooks from the ceiling and a glass-fronted fridge showing the day's produce. The new premises keep that look, redesigned by the studio yyplusplus with nods to both the Ponzano original and Sala Cero, and add table service to the classic bar seating.

Calle de Alonso Cano 28, in the Ríos Rosas neighbourhood of Madrid's Chamberí district, about 150 m from Alonso Cano metro (Line 7) and 200 m from Ríos Rosas (Line 1). The restaurant moved here from its original home at Calle Ponzano 11.

Nearby

Ríos Rosas is a working residential grid north of the old centre, where restaurants answer to the people who live there rather than to visitors. It sits nearer Estadio Santiago Bernabéu than anything touristic, and the eating is unhurried, mid-priced and quietly confident. This is where you go for a proper lunch without theatre.
