The Story
Casa Paulino's story starts with a lottery ticket. On Monday 5 July 1954, Paulino Ramos González, 28, born in Oco, a poor village in Ávila, and working as a waiter in Madrid after his military service in Ceuta, won with a décimo. That November he bought, for 139,550 pesetas, a narrow taberna called Macario at Calle de Alonso Cano 34, with a wood-and-zinc bar and a small dining room of marble tables. He had met his wife, Francisca, while she worked at a casa de comidas on Calle de Jacometrezo, and it was 'la señora Paca' who soon began serving food: cocido, lentils and plenty of boquerones. Their children grew up in the 50-square-metre restaurant, living in the back room and doing homework at the dining tables. When Paulino senior died, his sons Paulino and Javier, then 22, persuaded their mother to carry on, and the younger Paulino set out to turn the old casa de comidas into a modern restaurant without losing its traditional cooking.
The Cuisine

From Chatos to Callos
At first the taberna sold wine by the litre and by the glass. As the family grew, the kitchen grew with it, adding albóndigas, redondo de ternera and callos to Paca's cocido and lentils, and the callos are still served 'al estilo de la Paca' in her honour. Today the house's line is quality over novelty: each year brings only a few new dishes, built on seasonal produce, alongside the classics.

In the dining room, the signatures are callos a la madrileña al estilo de Paca, kokotxas de bacalao al pilpil and quail stuffed with Iberian secreto; at the bar, a shorter callos and croquetas de changurro go with a glass of wine.
