Background
About Persimmon's
The Story
Persimmon's calls itself a new restaurant and artisan cocktail bar in the heart of Madrid, on Calle de Bárbara de Braganza, built around Georgian influences and meant as a meeting point over food and drink.
The Cuisine
The kitchen works from Georgian influences, with a Supra brunch on the menu, and the cocktail list is built on chacha, Georgia's traditional distillate.
The Georgian Carta
The 2026 carta opens with a trio of pkhali dips of pumpkin, beetroot and spinach with homemade cornbread (€16), gebjalia of sulguni cheese filled with ricotta and mint, badrijani nigvzit, aubergine rolled around spiced walnut paste with pomegranate, cheek croquetas with kharcho sauce, khachapuri on a skewer with three cheeses and a grilled egg yolk, and meat-filled blinis. From the grill come a Georgian suckling-pig bikini with tkemali-style green plum sauce, chicken with smoked cheese on buckwheat and raspberry tkemali, ojakhuri of Iberian pluma, smoked beef qababi, skirt steak with ajapsandali and octopus with gomi and adjika (€29). Desserts include pelamushi, a grape-juice pudding with honeyed walnuts, and khachos paska.
Chacha Cocktails and Supra Brunch
The cocktails are built on chacha, the double-distilled Georgian spirit: the Tamada with ginger and lime, the Kokhta with fresh raspberry, the Aagulava with pomegranate and mint, the Tamar Mephe with a float of Saperavi wine, and the Ar Gaichacho with bourbon, lemon and beetroot, at €13 to €14. The Supra brunch (€35) runs through khachapuri, chakhokhbili and other Georgian dishes with a dessert and a drink.
