It launched as a 'vegetarian for non-vegetarians', and its sharing carta still puts vegetables first while adding fish and meat. The look is gypsy-mystical, by Eme Carranza, and cocktails came from Angelita y Amarguería.

About Zíngara
The Story
Mercedes 'Mechi' Caamaño, who came to Europe to study fashion at Central Saint Martins, and Agustín Patrizio, both from Buenos Aires, opened Zíngara in 2021 with advice from Anson+Bonet and with Maximiliano Rossi, a pioneer of vegan cooking in Argentina, as consultant chef. The idea was a carefully designed room, a menu that put vegetables at the centre and a strong cocktail list, and its plant-forward dishes, crispy broccoli above all, made its name. The couple later opened Le Clan nearby, a looser all-day café-bar.
The Cuisine
Cocina de autor for sharing, with nods to faraway flavours. The current carta opens with fresh figs on sheep's yogurt, Argentine chipá of cheddar and provolone, bonito crudo with mango, chipirones on a pepper-and-nduja sofrito, a crisp prawn with sriracha mayo, mille-feuille 'patatas baba' with alioli and brava, and a causa acevichada of oyster mushrooms. Mains include sweet-potato noodles with kimchi mayo (with bulgogi skirt as an option), pear-and-gorgonzola agnolotti, an aubergine milanesa, grilled meagre, corn 'ribs' with salsa macha and a shawarma in paratha.
The Room
Interior designer Eme Carranza gave it a gypsy, mystical, organic look: candles, fans, tambourines and candelabras under a Moroccan-style tent, with low light throughout. Hidden downstairs is a private room built around a marble table for 14, which hosts dinners, celebrations and a group tasting menu designed with The Macallan.
Cocktails
The bar is billed as 'nomad' cocktail-making. The original list came from Angelita y Amarguería (Mario Villalón, Roberto Castán and François Monti), drawing on tea infusions and 19th-century European drinks, such as a Scotch Fashioned made with Earl Grey. It stays open to 02:00 on Saturdays.
Practicalities
Dinner Tuesday to Friday from 20:00 to midnight, Saturday from 13:30 to 02:00 and Sunday lunch from 13:30 to 17:00; closed Mondays. Book through the website or call 652 18 80 63. Alonso Martínez and Colón are the nearest metro stations.
