Maximiliano Rossi is an Argentine chef and an early pioneer of vegan cooking in Argentina who was consultant chef for the 2021 opening of Zíngara, Mercedes Caamaño and Agustín Patrizio's restaurant on Plaza de las Salesas in Madrid. His launch menu reinterpreted plant-based cooking at a fine-dining level, with crispy broccoli, patatas bravas, a Korean-style saam with almond pâté and a mushroom causa, in a gitano, mystical room by Eme Carranza.

Early years
Maximiliano Rossi is Argentine and one of the early pioneers of vegan restaurant cooking in Argentina.
Career
He was consultant chef for Zíngara, which Argentine founders Mercedes Caamaño and Agustín Patrizio opened on Plaza de las Salesas in 2021 with advice from Anson+Bonet. The opening menu put vegetables at the centre with reinterpreted dishes such as crispy broccoli, patatas bravas, a Korean-style saam with almond pâté and shiso, a mushroom causa built ceviche-style and sorrentino pasta.
Philosophy
Rossi's approach was to give plant-based dishes fine-dining treatment and coax unexpected flavours out of vegetables, in a dining room designed by Eme Carranza on a gitano, mystical and organic theme. Zíngara's carta has since widened to include fish and meat alongside its vegetable-led plates.
