The tandoor turns out chicken and lamb tikka, shashliks and king prawns. Then come the curries, with chicken, lamb, beef or prawns cooked in more than twenty styles: tikka masala, korma, butter, Kashmiri, do pyaza, dhansak, jalfrezi, rogan josh, Madras, vindaloo and the fiery phaal, plus balti, rezala and achari.
