About Miyama
The Story
Miyama ('the beautiful mountain') opened in September 2004 on Calle Flor Baja, just off Gran Vía, in the premises of the legendary Tokio Taro, taking over from sushi master Masao Kikuchi. The room was completely refurbished, and a more modern Japanese cooking caught on quickly while keeping the quality the address was known for. In 2009 a second Miyama opened on Paseo de la Castellana; the two are run as separate restaurants with their own cartas.

The kitchen cooks modern Japanese, ranging from sushi, sashimi, nigiri and tempura to traditional stews like sukiyaki and shabu-shabu.
Sushi, Sashimi and Stews
Sashimi comes in full or half portions (tuna, toro, salmon, squid, white fish of the day, tatakis Miyama-style) or as assortments of three, five or a chef's seven (€36.50 to €58.50). Nigiri are sold in pairs, from salmon at €9 to toro, German Simmental beef loin and, from November to March, sea urchin. For something warming there are the traditional stews for two, sukiyaki in warishita sauce or shabu-shabu in dashi, both with Simmental beef loin (about €31 a head).
From the Kitchen
Cooked dishes include chawanmushi, dobin mushi broth, octopus shumai, udon or green-tea soba with prawn tempura, sardine tempura rolled in shiso and ume, the house prawns on a crisp basket, Ibérico secreto in sweet miso, tuna teriyaki and gindara (black cod) baked in miso. There's an omakase menu, a gluten-free menu and set lunches on weekdays.
Practicalities
The sushi bar at the back looks onto an interior courtyard with a Japanese garden. Lunch and dinner most days, closed Wednesdays and Sundays; book online or call 915 40 13 86. Plaza de España and Santo Domingo are the nearest metro stations.
