The carta is written in Madrid slang and cooked from local produce: a 'cuchara fetén' spoon dish of the day, Guijuelo acorn-fed ham with 'banderillas del coso', shrimp tortillitas in a paper cone with pipirrana, a bluefin tuna tartare, roast Japanese squash on pine-nut ajoblanco, mussels 'pa perder el peluco' with blue cheese, croquetas postineras, huevos rotos and a cachopo of Ávila white veal, plus paella and arroz caldoso. Most starters come in half or full portions, and a three-course cocido madrileño is served in season.
