Pulso by Eboca is a share-plates restaurant at Gran Vía 70, in the Hotel Senator building, from the Eboca Restaurants group, which also runs Bloved. It reworks Madrid classics with international touches: bravas with alioli foam, torrezno with patata revolcona, cocido madrileño cannelloni with coconut béchamel, chicken pepitoria tacos and oxtail bikinis, alongside grilled octopus, wild sea bass and a 35-day aged chuletón. It works with Teatro Sofía next door on a dinner-and-show box.

The Story
Pulso by Eboca is a Gran Vía opening from Eboca Restaurants, the group behind restaurants such as Bloved, pitched as a tribute to Madrid's cooking brought up to date with international influences. It sits in the Hotel Senator building at Gran Vía 70, where in November 2025 Teatro Sofía, a comedy club, opened in the space once occupied by La Chocita del Loro; the theatre's Dinner Box comes from Pulso's kitchen.
The Cuisine
Madrid cooking reinvented for sharing, with local, seasonal and organic produce: gildas, bravas, croquetas, torrezno, pepitoria, cocido and oxtail, plus fish, rice and grilled beef.
Plates to Share
Gildas from Santoña (€3.95 each) come with anchovy, boquerón, octopus or marinated sardine. The platillos include the house bravas with alioli foam (€13.50), ensaladilla rusa with a lacy fried egg and pescaíto, torrezno carved to order with patata revolcona, lime and Maldon salt (€16), croquetas of Ibérico ham, oxtail and salt cod made 'a pulso', Andalusian-style baby squid with squid-ink mayonnaise, eggs with Ibérico ham, an oxtail bikini in butter bread with truffled parmentier and cheddar, and grilled octopus with carabinero emulsion (€29.50). From the garden: grilled-mango salmorejo, a ventresca millefeuille with escalivada, grilled avocado and confit artichokes with foie.
Mains and Desserts
Mains run from free-range chicken pepitoria tacos with saffron (€21), sweet-potato gnocchi with morels and truffle, and cocido madrileño cannelloni with coconut béchamel (€22) to salmon tataki, wild sea bass with garlic and guindilla, arroz del senyoret, Ibérico cheek braised in Zarro vermouth, suckling-pig confit, a 16-hour lamb shank, Dos Primaveras beef tenderloin and a 500 g chuletón aged 35 days (€39). Desserts include a torrija with citrus toffee and white-chocolate crumble, pistachio cheesecake and a raspberry panna cotta with cachaça syrup.
