The Story

The heart of Matteo Cucina is its owner and head cook, Matteo de Filippo, together with Chiara Guberti. De Filippo trained at ALMA, the international cooking school near Parma, and worked under masters including Gualtiero Marchesi; press coverage also describes him as a former cook at the Italian embassy in Madrid. The project began as a small home-cooking counter in the market, known at first as La Cocinita del Chef Matteo, and grew into a shop, pasta workshop and informal restaurant staffed by a close-knit Italian team. It holds a Solete in the Guía Repsol.

The Cuisine

Traditional Italian recipes, cooked as they're made in Italy without reinterpretation. Most ingredients come from the Mercado de la Paz itself, others from Italy, such as mozzarella flown from Naples several times a week, and some from the family farm of Scovaventi. The weekly carta covers fresh pastas, antipasti and secondi, and there are vegan and coeliac options.

What to Order

The house names the lasagne, the aubergine parmigiana, il polpettone and the fresh pasta as essentials: fettuccine, tagliatelle and ravioli, made in different sizes and with different fillings. The Guía Repsol recommends the carbonara and the tiramisù, and mentions ricotta ravioli with truffle and an artichoke lasagne. Because the menu changes weekly, the specific pastas and sauces vary; tonnarelli carbonara and cacio e pepe are regulars.

The Shop

The counter sells dishes and sauces cooked the same day in Matteo's kitchen: fresh filled pasta, sauces, lasagne, cannelloni, gnocchi, focaccia, vitello tonnato, Neapolitan polpettone, ossobuco and trippa, with tiramisù, panna cotta and crostata. There are Italian cheeses and cured meats, pizza bases and dried pasta too, and the weekly takeaway dishes can be ordered ahead.

Hours and Booking

The shop opens Monday to Friday from 09:00 to 16:00 and 17:00 to 20:00, and on Saturday morning; it's closed on Sunday. Lunch is the main service. Reservations are by phone only, not by email.
