Lina is a small fusion bistro on Calle de Fernando el Santo in Almagro, opened at the end of 2024 by Argentine chef Patricio Massimino and his brother Diego and named after their grandmother. The cooking mixes Argentine roots, the Mediterranean and the Caribbean, now served as three tasting menus from €65 to €105, and the wine list was built with sommelier Alex Pardo. It entered the Michelin Guide selection for 2026 and opens Tuesday to Saturday, lunch and a late dinner.

About Lina

The Story

Lina opened at the end of 2024 on Calle de Fernando el Santo, in Almagro, as the first independent project of chef Patricio Massimino and his brother Diego. It's named after their grandmother, who taught them the pleasure of being a good host and of long sobremesas around a family table; the chef says his first crush on cooking happened in her kitchen. Diego runs the room and Patricio the kitchen, and the restaurant entered the Michelin Guide selection for 2026.

The Cuisine

The tagline is Argentine roots, Mediterranean essence, Caribbean spirit: the chef's Argentine upbringing, the years he spent cooking in Europe and the Caribbean, and the ingredients he picked up along the way. The kitchen now works as three tasting menus. Mestizaje, at €65, runs to eight passes (two snacks, a cold and a hot starter, fish, meat, dessert and petits fours); Lina, at €85, has ten; and Sabores, at €105, twelve. The dishes change with the season and the market, so they aren't published in advance, and the menus can be adapted for allergies, coeliacs and pescatarians if you say so when booking.

Dishes From the First Carta

Lina opened with a carta of sharing plates in three parts, Raíces, Esencia and Recuerdos, and some of those dishes set the tone. The Escabeche de Lina is Japanese aubergine in a light citrus escabeche with sunflower-seed hummus, pickled onions and a cane-honey and aged-rum reduction. The Huevo Cobarde puts a slow-cooked egg from Cobardes y Gallinas under roast-potato foam, house-cured Ibérico guanciale and puffed crackling. There were Barbados 2016 scallops with coconut royale and ember-roasted squash, a lemonfish tartare finished at the table, 16-hour Angus rib with eddoes and a tamarind demi-glace, and among the desserts a quince with rhubarb and mascarpone cream and a baba au rhum.

The Room and the Wine

It's small, with eleven tables at a mix of heights and a bar that pours a short list of cocktails, and the street window is dressed like a boutique's, changing with the seasons. The wine list leans Spanish but steps away from the classics, with a section of Argentine bottles and a focus on small producers. Pairings are chosen at the table: three wines for €30 or six for €50, and water and natural lemonade come with the menu.

Groups

Lina takes groups of eight to 45, with closed menus with drinks up to 14 people and a bespoke proposal beyond that. Up to 20 can book tables without closing the restaurant, and from 20 to 45 the whole place can be taken over. On Sundays and Mondays, when it's normally closed, it opens for groups of more than 30 on request.

Patricio Massimino

The Team

Patricio Massimino was born in Argentina, trained at Madrid's Escuela de Hostelería y Turismo and Le Cordon Bleu in Paris, and worked in Michelin-starred restaurants, among them Ramón Freixa Madrid and Atrio, and in Relais & Châteaux and boutique hotels in Europe and the Caribbean. His brother Diego looks after the guests, and the wine list was drawn up with Alex Pardo, named Spain's best sommelier in 2023.
