Background
About La Burlona
The Story
La Burlona is a creative-cooking spot with a late bar on Calle de Santa Isabel, in Lavapiés, and it holds a Repsol Solete. It runs Wednesday through Sunday, staying open into the small hours and pushing past 2am on Fridays and Saturdays, leaning bar as much as kitchen.
The Cuisine
Creative small plates: yellow gazpacho with red tuna tartare, ensaladilla rusa with airy mayonnaise, mussels in a callos-style sauce, and a boletus-and-foie fideuà, alongside creative cocktails and an extensive wine list.
Gastronomía Sin Etiquetas
The house calls itself a bar-restaurant 'without labels', and the motto is that the name or origin of a dish matters less than its flavour. The carta proves it, mixing Spanish, Peruvian and Asian ideas freely. The fixed classics are the yellow gazpacho with red tuna tartare and tempura shiso leaf, an ensaladilla with airy mayonnaise, mussels in callos sauce with mini torreznos, a boletus and foie fideuà, zamburiñas with ají amarillo leche de tigre, and crisp pig's ear tacos with squid stew. The seasonal list has run to oysters with ponzu and passion fruit, a house gilda, fried sea bass with anticucho dressing, Ibérico pluma with mojo rojo, brioche banh mi of charcoal-grilled presa, a cristal-prawn omelette, a lemonfish ceviche, butifarra meatballs with boar civet and mole poblano, Cantonese-style Ibérico ribs and a black-trumpet rice.
Green Plates, Wine and El Trilero
A short green-and-vegan section covers a board of sweet-and-sour vegetables, courgette carpaccio with vegan sobrasada and a courgette flower stuffed with patatas revolconas, and desserts include an Idiazábal cheesecake with a blue-cheese edge. The wine list favours young Spanish labels by the glass and bottle, including Madrid and Toledo wines and a Cádiz palomino, with cava and two Champagnes. The cocktail bar goes by the name El Trilero: signatures such as La Dama de Sichuan (gin, yuzu, sake and Sichuan pepper) and an Italicus-based Angelo sit alongside alcohol-free drinks made with Seedlip and three kinds of mojito. The restaurant takes a limited number of bookings up to a month ahead.

It's at Calle de Santa Isabel 40, in the Lavapiés area of Madrid's Centro district.
Nearby
Lavapiés is a steeply layered corner of central Madrid, a tight grid of narrow streets where the cooking comes from everywhere at once. The rooms are small, the prices are honest, and the good ones fill with regulars rather than reservations. Museo Reina Sofía and CaixaForum Madrid sit uphill from it, El Rastro at the bottom.
