Background
About El Patio de Claudio
The Story
It sits inside Hotel Único on Claudio Coello, and the venue's own framing is the reveal: a garden opening up behind the façade of a grand townhouse, on a street otherwise given over to shopfronts. It calls the building a petit palais, and the point of the place is lingering. Long lunches run into the afternoon and can end with a cocktail out in the garden.
The Cuisine
A Spanish bistro carta, familiar rather than clever, built for sharing and for not hurrying. The venue says the menu shifts only slightly, because the dishes people come back for stay on it: light sharing starters, turbot, and a rice with squid and red prawns.
After Ramón Freixa
El Patio de Claudio opened in March 2025 in the same room where Ramón Freixa ran his two-Michelin-star restaurant for fifteen years; Freixa left on friendly terms to start his own project, now Ramón Freixa Atelier. Hotel Único's aim was a closer, more affordable bistro, a place to be in Madrid at any hour, from a coffee to a nightcap, with the kitchen open non-stop.
The dining room was fully redesigned by Málaga-born interior designer María Santos, who had also renewed the hotel's rooms and suites: neutral, warm colours, wicker chairs, antique lamps and books to make it feel like a family home. The Atelier, an elegant private room for up to eight, suits intimate celebrations. The walled garden, a secret garden in the middle of the asphalt, has its own sharing carta and drinks.
The Carta
The carta changes only slightly, because the favourites stay. Starters include hand-carved acorn-fed Ibérico ham (€36), crystal bread with tomato (€2.50 a piece), the croquette from Mas de Torrent, a sister hotel in the Único collection (€3 each), a vegetable carpaccio, a chilled almond cream with marinated grapes, a shallot tarte Tatin and a steak tartare of aged sirloin (€28).
Mains run from sweet-potato gnocchi with brown butter and sage and a rabbit ragù with caramelised carrots to the rice with squid and red prawns (€26), cod pil-pil with ratatouille, wild sea bass in an almond crust with poultry jus, baby squid on celery risotto, Royal Ibérico pork shoulder with a fine purée, and an aged sirloin Café de Paris (€34). The chicken with lemon confit and Kalamata olives (€24) is a house favourite. Desserts, €8 to €12, include a lemon cake with citrus ganache, an apple and cinnamon strudel, a tonka-bean floating island and a simple scoop of vanilla ice cream with noisette butter. Bread and water are €4 a head.
The Wine List
The wine list is arranged by style rather than region, fruity, dry, young, smooth and structured, with several by the glass. It includes wines from the group's own Finca Serena in Mallorca, Madrid bottles such as El Hombre Bala Albillo Real and El Regajal, and classics from Muga and Marqués de Murrieta up to Château Kirwan, Terreus and Trasnocho 2007, with Juvé & Camps cavas among the sparkling.
The Chef
The Team
Chef Mario Vallés leads the kitchen, with the team working in close coordination around him. A classically trained cook with a French grounding, he worked in several large French hotels and with Alain Passard, and made his name in Madrid with Hortensio, now closed, and Narciso, a contemporary Central European-style bistro.

El Patio de Claudio Dining Experience
Elegant and classic, and genuinely quiet, which makes it one of the easier rooms in this part of Madrid to actually talk in. The salon has light-filtering curtains, a wooden bookshelf and closely set tables, with the garden in view. Outside, the terrace and garden dining are the draw.
