The Story
Casa Salvador is a traditional Madrid dining room on Calle de Barbieri, on the seam between Chueca and Justicia, listed in the Guía Repsol. It began in 1941 as a small taberna taurina and has stayed classic and rustic ever since, its walls hung with bullfighting paintings and photographs that keep the memory of old Madrid alive.
The Cuisine
Cocina tradicional madrileña, and the house calls itself a temple of it. The kitchen is known for callos a la madrileña, estofado de rabo de toro and Lenten potajes, alongside Iberian charcuterie and cheese, soups and salads, fresh vegetables, egg dishes and omelettes, and fresh fish and meat, with a sherry and dessert-wine list. The History
Salvador Blázquez opened Casa Salvador in 1941, in the hard years after the Civil War, as a taberna taurina on one of Madrid's most emblematic streets. It drew a high-flying crowd that has never quite left: bankers like Alfonso Escámez and Pablo Garnica, bullfighters like Luis Miguel Dominguín, Victoriano Valencia and Paco Camino, actors like Charlton Heston, Alain Delon and Ava Gardner, the producer Samuel Bronston and the writer Ernest Hemingway. In 1976 his nephew Pepe Blázquez transformed the taberna into a reference for cocina tradicional madrileña, and it remains a family restaurant that doubles as a museum of the city's social and taurine history.
The 2025 Carta
The carta is old-school and priced by the ración, with half portions for many dishes. The meat section is the heart of it: rabo de toro (€22, or €12 for a half) and callos a la madrileña (€20), then gallina en pepitoria, stewed tongue, garlic chicken, meatballs, veal chop, entrecôte and sirloin. The fish is equally classic: battered hake, hake a la vasca, hake tacos and hake meatballs, kokotxas, hake 'ijadas' in salsa verde, monkfish, chipirones on the grill and sole meunière. Before that come Sánchez Romero Carvajal Ibérico ham, Burgos morcilla, chicken-and-ham croquetas, cod fritters, garlic prawns, consommé, noodle soup, the legume of the day with chorizo, sautéed vegetables with ham, and revueltos and tortillas. Desserts are all €6, from leche frita and flan to natillas and a lemon sorbet with cava.
The Weekday Menu and the Famous Guests
At weekday lunch there's a €25 menú de la casa: the legume of the day, vegetable panaché, mixed salad or noodle soup, then entrecôte, meatballs, hake in salsa verde or hake meatballs, with bread, a drink and dessert or coffee. The dining rooms double as a museum of bullfighting and social Madrid, and the regulars' roll-call has kept growing: politicians and executives at business lunches, designer Pascua Ortega and film director Álex de la Iglesia among the newer names, and Anthony Bourdain, who stopped here for his No Reservations episode in Madrid. The bar keeps finos, manzanilla and old Spanish brandies.
