About Barganzo
The Story
Tami and Aviv Mizrahi are Spaniards from Ladino-speaking Sephardic Jewish families, descendants of the Jews expelled from Spain. They chose Madrid as home more than ten years ago, their three children were born here, and Barganzo grew out of the wish to join the place their families left with the Jewish and Israeli cooking that changed along the way. They say they don't try to reinvent Jewish cooking, only to add their own chapter: seasonal, green and changing every month.
The Cuisine
Vegetarian Jewish and Israeli cooking, built on the idea that Jewish cooking was born from travel: Morocco, Syria, Yemen, Turkey, Greece, Poland and beyond, each adding something to the pot. The carta, which changes with the season, runs from Jerusalem artichoke and masabacha to pani puri, and the house is proud of its hummus. The kitchen works with local, seasonal produce from Madrid and Castilla and turns peels into jams and stems into green sauce.
The Aviv Tasting Menu
The tasting menu, named for Aviv, is €80 and includes a seasonal cocktail or two glasses of wine plus water. It moves through acts: lahoh bread on pumpkin and cashew cream and leek-filled pasta 'caramelos' in sweet corn sauce with sage; then a mix of seasonal mushrooms with a poached yolk, baby carrots on carrot cream with kadaif and spicy honey, and Jerusalem artichoke in six textures with truffle; then 'Flor para Tami', a courgette flower stuffed with rice, herbs and mozzarella with dried-mint yogurt and green schug, and shishbarak, handmade tortellini filled with labneh and spinach in warm yogurt sauce. Small vegetable and fruit shots sit between the acts, and desserts change with the chef's inspiration. There's also a Shabbat table menu.
Wine and the Community
The wine partner is Viña Memorias, a family winery in DO Utiel-Requena working old-vine Bobal and Macabeo, organic and dry-farmed, with wines that are vegan and, for a selection, certified kosher. The restaurant also works with Fundación Eddy, which shelters young LGBTQ+ people who have been thrown out of home, and hires residents of the foundation onto its team.
