Akiro is a Nikkei hand-roll bar on Calle Hermosilla in the Salamanca district, from chef Luis Arévalo. Guests sit at bar-style tables facing the chefs, who roll, cut and serve each hand roll on the spot, from tuna with jalapeño to wagyu with smoked Maras salt. About Akiro
The Story
Akiro calls itself the first Nikkei hand-roll bar in the world, and it's the concept of Luis Arévalo, a chef born in Iquitos in the Peruvian Amazon who discovered Japanese cooking in Lima, trained with Japanese chefs in Chile and moved to Madrid in the early 2000s. His first restaurant opened in 2010 and earned recognition from both Michelin and Repsol. Akiro now has bars in Madrid, Barcelona, Milan and Chicago.
The Cuisine
Nikkei, Japanese technique with Peruvian soul, served as hand rolls, nigiri, sashimi and small plates.
Hand Rolls
Hand rolls come in sets of three to six (€16 to €36) or one by one: ebi furai with breaded prawn and chili-garlic mayo (€6), tuna with jalapeño, sriracha mayo and umeboshi, salmon with ocopa sauce, hamachi with ají amarillo and pachikay sauce, an acevichado of corvina, scallop with yuzu kosho, crispy eel with orange honey, squid chicharrón with squid-ink alioli, an anticuchero octopus, and flamed wagyu with smoked Maras salt (€12). Ask about vegan hand rolls.
Nigiri, Plates and Drinks
Flamed nigiri run from salmon with ají amarillo (€3) to wagyu (€8), plus a premium toro with caviar and marrow and a gunkan of wagyu tartare with a marinated quail yolk. Small plates include a corvina tiradito, hamachi ceviche with wasabi-ají leche de tigre, toro tartare with almonds, prawn tempura, a wagyu skewer with satay and anticuchera sauces and a katsu burger. Desserts include suspiro de la geisha, tres leches and a miso brownie with lúcuma ice cream. To drink: pisco sours, chilcano, a sake sour, Japanese and Peruvian beers and a short wine list.
