Background
About A vÁnvera
The Story
A vÁnvera was founded by Luigi Bertaccini, from Romagna, to share a simple Italian cooking that respects the traditions and recipes of his own region and of the rest of Italy, with the help of his friend and mentor Andrea Tumbarello of Don Giovanni. He called it 'cocina de amistad', the cooking of friendship: the idea is that you feel like a friend in his house. Alberto Asara, who worked alongside Luigi for many years, now runs it and keeps that spirit.
The Cuisine
Expect thin-crust pizzas, restrained Romagna-style pastas, and vegetable or mushroom lasagne, with a wine list built from Italian and Spanish denominaciones de origen.
The Name
'A vanvera' is an Italian expression for doing or saying something without thinking, any old how. The house traces the word to an old card game, 'bambára', and possibly to the Spanish 'bambarria', a billiards shot that goes wrong but still wins. It's a lively, not very elegant word, the restaurant says, but a strong one. The kitchen also runs regional specials, such as a Tyrolean menu of speck, canederli and grappa tasting.

A vÁnvera Dining Experience
A vÁnvera keeps the focus on the plates in its Chamberí room, a northern Italian kitchen that plays its pizza and pasta straight rather than dressing them up. The pizzas come thin, in the northern style rather than Neapolitan, and the pastas follow the restrained Romagna school, with a wine list drawn from Italian and Spanish denominaciones de origen.

Calle Zurbano, 85, 28003, Madrid, Spain
Get directions→Getting There
It's on Calle de Zurbano in Ríos Rosas, part of the Chamberí district in central Madrid.
Nearby
Ríos Rosas is a working residential grid north of the old centre, where restaurants answer to the people who live there rather than to visitors. It sits nearer Estadio Santiago Bernabéu than anything touristic, and the eating is unhurried, mid-priced and quietly confident. This is where you go for a proper lunch without theatre.
