The Story

Leña is Dani García's char-grill steakhouse on Paseo de la Castellana, in Ríos Rosas on the Chamberí side of Madrid. It came out of his 2019 decision to walk away from haute cuisine toward something more accessible, opening in Marbella in 2020, then in Madrid in June 2021, and since then in Dubai, Barcelona, Ibiza, Mallorca and Bodrum. The cooking runs on fire and smoke around the best cuts of meat, with a cocktail bar and a low-lit room.

The Cuisine

Char-grill and open fire, built around the best cuts of meat, though the venue is clear it's not only about meat. There's a cocktail bar and a wine list picked to sit alongside the food. Its own word for the place is a steakhouse that runs on brasas, the live grill.

The Room

The Madrid Leña sits in the Hyatt Regency Hesperia building on the Castellana, and the interior, by Astet, follows the Marbella original: lines of ash wood across the ceiling evoke the rings of a tree trunk, set against jet black, textures and tones that suggest charred wood, with Neolith surfaces throughout. The open kitchen puts the fire on show, and a large bar serves signature cocktails. There's a private room, group dining from 12 guests, and the whole restaurant can be booked for up to 109.

The Carta

Different charcoals, embers and cooking techniques run through the whole carta. Starters include the steak tartare made at the table, an old-cow lasagne, roast-chicken croquetas, foie 'to spread' with dressed young garlic, sweetbreads grilled with lemon 'the way my father did', grilled Málaga avocado and smoked burrata with aubergine. There are yakitori of chicken and A5 wagyu, and from the Mediterranean, grilled octopus, red tuna and a whole sea bass.

The premium cuts are the centrepiece: the Chuleta Especial DG, a kilo of old-cow chop aged 45 days, a 1.3-kilo tomahawk, a miso-painted porterhouse, Black Angus ribeye, and Miyazaki and Kagoshima wagyu. Flavoured butters, sauces from chimichurri to café de Paris and the Bull sauce, and sides such as a Robuchon-style potato purée complete the table.
