Zuara is chef David Arauz and sommelier Álvaro Prieto's Edomae sushi restaurant, which earned a Michelin star in its first guide (2023) at a small counter on Calle del Pensamiento and moved in 2026 to the Hyatt Regency Hesperia at Paseo de la Castellana 57. It now runs as two concepts: Zuara Omakase, the traditional counter where the itamae sets the menu, and Zuara Tēburu, a six-table Japanese bistro with an à la carte and a €75 Sushi Bento.

About Zuara Sushi
The Story
David Arauz has more than 25 years in sushi, from Suntory, Yashima and Abama Kabuki to 99 Kō Sushi Bar. Zuara, his own project with sommelier Álvaro Prieto, opened as a counter on Calle del Pensamiento in Tetuán and earned a Michelin star in the 2023 guide. In 2026, after a short closure for the move, it reopened inside the Hyatt Regency Hesperia on the Castellana, the hotel that also houses Dani García's Leña and Smoked Room.
The Cuisine
Edomae-style sushi, in which the treatment of the fish matters as much as the rice and vinegar. Arauz makes his own vinegar without added sugar, blends two classic vinegars for the rice, and uses real wasabi, building umami from fermentations, cures and sauces developed over months, on fish such as hamachi, pargo, scallop, amaebi, mackerel and bluefin tuna.
Zuara Omakase
The omakase counter is the original Zuara experience: the diner puts themselves in the itamae's hands and the menu evolves with the best fish of the day, building from cooked and cold courses to a nigiri progression. Prieto pairs wines and sakes from the restaurant's cellar.
Zuara Tēburu and the Sushi Bento
Tēburu is the new, more flexible format: order a couple of cold or hot starters, some nigiri, and keep adding if you like, rather than following a closed tasting menu. Its centrepiece is the €75 Sushi Bento, made to order with the day's fish: seven nigiri, four cuts of sashimi, six hosomaki and two pieces of futomaki, which can be rounded out with starters. Aged fish turn up in a salad, and the dressings are, in Arauz's words, a little less purist than before.

Two moods under one name. Zuara Omakase keeps the intimate counter format, with the chef working in front of you; Zuara Tēburu ('table' in Japanese) is a looser, everyday room of six tables, aimed partly at people working in the business district. Arauz recommends eating the nigiri by hand and without soy sauce.
