Early years

Arauz trained as a disciple of Ricardo Sanz of the Kabuki group, one of Spain's most influential references for Japanese-Mediterranean fusion.

Career

Arauz runs the cold and sushi-bar side of the kitchen at 99 Sushi Bar in Sant Gervasi-Galvany, the Bambú Group's first restaurant outside Madrid. He works alongside Roberto Limas, who leads the hot kitchen. The bar at the centre of the restaurant is where Arauz presses, slices, and serves directly to guests, giving the format a counter-dining intimacy alongside the regular dining room.

Philosophy

Arauz's training under Ricardo Sanz shapes his work, Japanese tradition translated through Mediterranean product, with the sushi bar as the anchor of the experience.
