Insolent opened in 2023 inside Hotel Sonder La Casa del Sol in Gracia, founded by four co-owners: head chef Julia Castello Bravo (from Girona, trained with Paco Perez, spent 4 years cooking for Pep Guardiola's team in Manchester, his family runs the famous Can Castello pastry shop in Girona), chef Miquel Garcia (ex-El Celler de Can Roca, ex-Disfrutar), dining room director Pedro Huerta Martino, and sommelier Javier Custodio Salvago.

Chefs Julia Castello Bravo and Miquel Garcia serve creative Mediterranean cuisine with seasonal market ingredients. The menu features small bites (3.50-5.50 EUR), sharing plates like steak tartare (21 EUR) and white shrimp with bone marrow (19 EUR), market dishes including stuffed squid (25 EUR) and suckling pig (30 EUR), and a charcoal grill section with 45-day aged Leikan beef.
