Julià Castelló is a Girona-born co-chef and co-founder of Insolent in Barcelona's Gràcia, opened with his childhood friend Miquel García. Biography
Early years
Castelló was born in Girona and met his future business partner Miquel García at school when they were both thirteen. The Castelló family of Figueres is associated with the iconic Can Castelló pastry shop, where the family is credited with revolutionising the xuixo more than a hundred years ago.
Career
Castelló cooked at Paco Pérez's Tast restaurant and at Pep Guardiola's restaurant in Manchester before joining Miquel García to launch Insolent in Barcelona's Gràcia. The four partners — Castelló and García in the kitchen, Javier Custodio and Pedro Huerta on the dining-room side — describe their cooking as 'territory cuisine that combines tradition, technique and a special creative sensitivity to offer seasonal, flavorful and surprising dishes.' Insolent serves a Castelló-family xuixo prepared to the restaurant's directions, and is located inside the Hotel Sonder Casa del Sol on Plaza del Sol. The restaurant is in the Michelin Guide selection.
