Early years
García was born in Girona and met his future business partner Julià Castelló at school when they were thirteen.
Career
García spent more than two years as a chef at the three-Michelin-star El Celler de Can Roca in Girona — the Roca brothers' flagship — before working at Disfrutar in Barcelona under the Castro / Xatruch / Casañas trio. He and Castelló opened Insolent inside the Hotel Sonder Casa del Sol on Plaza del Sol in Gràcia, with Javier Custodio and Pedro Huerta running the dining room. The kitchen serves what the team calls 'territory cuisine that combines tradition, technique and a special creative sensitivity to offer seasonal, flavorful and surprising dishes.' Philosophy
García brings two of Spain's most-celebrated kitchens — El Celler de Can Roca and Disfrutar — into Insolent's seasonal, technique-led format. The cooking is built on Catalan tradition, with the freedom of two young chefs running their own project.
