Biography

Early years

Born in 1962 in Rosal de la Frontera, in Huelva, Pérez moved to Llançà on the Costa Brava when he was six months old and has lived there ever since. His parents ran a tapas bar in the town and he began cooking at twelve, his early identity shaped by the Mar d'Amunt — the upper Mediterranean — and the Tramuntana wind that defines the Empordà.

Career

Together with his wife Montse Serra, Pérez took over Miramar in Llançà, the establishment Serra's grandparents had opened in 1939. Miramar earned its first Michelin star in 2000, its second in 2010, and has held two stars continuously since. He took on Enoteca at Hotel Arts Barcelona in 2008 (now 2 Michelin stars and 3 Repsol Soles), and in late 2019 opened Arco by Paco Pérez in Gdańsk, which earned a Michelin star — the first ever for the city.

Philosophy

Pérez's cuisine is rooted in the produce of the Costa Brava — the sea, the kitchen-gardens of the Empordà, and the mountains behind them. His tasting menus pair classical Catalan technique with avant-garde plating, and his identity is openly tied to the landscape of Llançà rather than a single signature style.
