The Story

Granja Elena was founded in 1974 by Patricia Calvo and Abel Sierra as a granja (dairy bar) and charcuterie in Barcelona's Zona Franca. Three of their children now run it as a family operation: Borja leads the kitchen, Patricia curates the wine list, and Guillermo manages the bar and front of house. What began as a modest neighbourhood eatery has evolved into what Repsol calls 'alta cocina de barrio', neighbourhood haute cuisine. The restaurant earned 1 Repsol Sol in 2023, one of only seven Barcelona restaurants recognised that year. Borja Sierra trained under Hilario Arbelaitz at the legendary Zuberoa in the Basque Country, and that influence, respect for the product, minimal intervention, long cooking times, defines his approach.

The Cuisine

Granja Elena is one of Barcelona's great temples of spoon cuisine (cocina de cuchara): slow-cooked stews, refined legume dishes, and braised preparations made with exceptional raw materials. The short, well-balanced a la carte menu highlights Borja's work with offal (tripe, pig's head, sweetbreads), game (red partridge, wild boar), black truffle, and seasonal market produce. Signature dishes include the Ganxet beans with cod cheeks, risotto with black truffle and foie gras, suckling pig confit, and the cod omelette. The famous 'desayunos de tenedor' (fork breakfasts) from 07:00 are a Barcelona institution, fried eggs with foie, sweetbreads, or jamón alongside elaborate hot sandwiches.

The Team

Chef Borja Sierra holds 1 Repsol Sol and also teaches on Scoolinary. Sister Patricia Sierra is the sommelier, curating a list centred on natural and minimal-intervention wines available by bottle and glass. Brother Guillermo Sierra manages the bar and service. Their mother's influence remains in the cooking, Borja credits both her and Hilario Arbelaitz as his primary inspirations.
