Background

About Noush

The Story

Noush is a plant-based bar-restaurant in Sants opened by an Iranian-heritage team who wanted to share Persian cooking as it is eaten at home: fresh herbs, fruits and grains layered together over slow heat. The website describes the kitchen as a personal project built around hospitality, serving regional dishes from across Iran alongside natural wines and good coffee in a cozy space with a sunny garden.

The Cuisine

The menu is 100% plant-based Persian. Signatures include the Persian kebab (Kabab Tabei) made with marinated Heura, eggplant and tomato stew (Ghooreh Bademjan), split-pea stew (Gheymeh), herbed rice with vegan "shrimp" (Vegambas), and house starters such as hummus, Shirazi salad and Persian olives marinated with pomegranate molasses and walnuts. Desserts include saffron-pistachio ice cream (Bastani Sonnati) and rotating cakes.

The Team

Noush is a small family-run operation, staffed by its founders and a close team. The restaurant emphasises Persian hospitality, in its own words wanting guests to feel "the warmth of stepping into a friend's home".

5 months of Noush — Instagram post celebrating five months since opening

5 months of Noush. As we step into the new year, we can't believe it's already been five months since we opened our doors. Five months ago, Noush was just a dream that has since grown into a place filled with conversations, shared meals, and familiar faces. A warm thank you to our friends and supporters.

Noush and Karetta Maluca natural wine partnership

We met Carla, the founder of @karettamaluca, two years ago at the El Born Vegan Market. Her project was inspiring, and her wine was exquisite. Naturally, when we started Noush, Karetta Maluca became our first wine partner. Thanks to you, every glass served at Noush this year helped protect sea turtles.

Noush closed February 13 to 15 — team travelling to show support

We'll be closed from February 13 to 15. We're travelling to Munich to stand in protest and show our support for our fellow Iranians. Some moments are bigger than daily life. Thank you for your understanding and for standing with us.

Noush partnership with a bakery for vegan Middle Eastern cakes

Exciting news! A delicious new partnership with @noush_barcelona — three vegan and gluten-free Middle Eastern cakes that complement Noush's plant-based Iranian cuisine: Orange Blossom and Almond, Persian Love Cake with delicate rose.

Iran internet shutdown — Noush encouraging sharing of internet via Conduit

After 18 days of internet shutdown in Iran, our mum's first message finally came through, only because someone outside the country shared their internet using tools like Conduit. If you have unlimited or stable internet, you can help too — helping them access blocked apps, news, and their families.

Noush Tah-chin — saffron rice cake with vegan yogurt, Heura chicken and eggplant

A savoury golden cake? Yes, please. Crispy on the outside, soft on the inside. Our Tah-chin layers aromatic saffron rice with creamy soy yogurt, vegan egg, Heura chicken and eggplant, topped with Persian barberries for the perfect bite.
