About Zaytun

The Story

Zaytun opened in 2024 when young chef Juanan Vizcaíno took over a 70-square-metre space in Sants to explore his own family roots, his father is from Jaén in Andalusia, his mother from Barcelona. The restaurant seats only around 30 diners across five tables, and his mother Anna María Soria runs the dining room while he leads the kitchen. Vizcaíno trained at ESHOB and describes his approach as a bridge between 'grandmother's cooking and elBulli'.

The Cuisine

The kitchen offers roughly 20 sharing dishes built on Andalusian and Catalan foundations and seasoned with influences picked up from travels. Signature plates have included a truffled chicken-and-mushroom croquette, a croissant-brioche filled with pickled mussels and Korean coleslaw, a Barceloneta-style bomb with steak tartare and brava sauce, green curry ray, confited cod loin with rin-ran and olivada, and a deconstructed romesco served with inflated regañás crackers. The list rotates with the season rather than following a fixed menu.
