Juanan Vizcaíno is a young Catalan-Andalusian chef behind Zaytun in Sants — opened in 2024 before he turned thirty — and The Alchemix in the Eixample. Both restaurants carry a Repsol Recomendado. The cuisine starts from a Catalan and Andalusian (Jaén) base, shaped by his dual family heritage, and adds international influences across a 20-dish sharing menu.
Biography
Early years
Vizcaíno was born to a Catalan mother and a father from Jaén — the dual cultural inheritance that runs through his restaurants. He studied at ESHOB (former Escola Muntaner) in Barcelona.
Career
Vizcaíno cut his teeth running the kitchen at The Alchemix, a gastrobar in Barcelona's Eixample with gastronomic ambitions. In 2024 he opened his own restaurant Zaytun in the Sants neighbourhood — a small restaurant whose name means 'olive' in Arabic. The 20-dish sharing menu starts from an Andalusian and Catalan base and adds international influences, including a deconstructed romesco. Both restaurants carry a Repsol Recomendado distinction.
Philosophy
Vizcaíno's cooking is built around the cross-current of his family — Catalan and Andalusian (specifically from Jaén) — pulled into a shareable format and pushed with international technique. Sharing is the structural choice: the menu is designed for the table to range broadly.
