Early years
Sierra grew up inside Granja Elena, the family restaurant his parents opened on the Paseo de la Zona Franca in 1974. He trained outside Barcelona at Restaurant Zuberoa in the Basque Country under Hilario Arbelaitz before returning to the family business.
Career
Granja Elena is now run by the third generation of the Sierra family — Borja, his sister Patricia, and his brother Guillermo Sierra Calvo. Borja leads the kitchen.
