The flexitarian concept means 80% plant-based and 20% oily fish, with no meat or dairy. Part of Teresa Carles Healthy Foods, which operates 7+ locations and an R&D centre in Lleida. Interior designer Estudi Francesc Pons converted the former textile warehouse into an industrial-chic dining space with high ceilings, natural light, and a roof terrace planted with a spice garden.
