The Story

Flax & Kale opened in August 2014 as Spain's first flexitarian restaurant, created by Teresa Carles and her son Jordi Barri. Teresa Carles is a pioneer of vegetarian cuisine in Spain, having opened her first vegetarian restaurant in Lleida in 1979. The flexitarian concept means 80% plant-based and 20% oily fish, with no meat or dairy. Part of Teresa Carles Healthy Foods, which operates 7+ locations and an R&D centre in Lleida. Interior designer Estudi Francesc Pons converted the former textile warehouse into an industrial-chic dining space with high ceilings, natural light, and a roof terrace planted with a spice garden.

The Cuisine

The kitchen serves creative flexitarian cuisine: 80% plant-based and 20% oily fish, with no meat or dairy. Signature preparations include a Flax & Kale pizza with a gluten-free base and cashew cheese, poke bowls, Thai green curry, pad thai, black truffle croquettes, seasonal salads, and a signature black rice baked with house vegetable stock, black garlic, boletus, and cardoncello mushrooms. Cold-pressed juices, kombuchas, and smoothies are made in-house, and weekend brunch is served Saturday and Sunday from 10:00 to 17:00.
