The Story
Dos Pebrots is the brainchild of Albert Raurich, former head chef of elBulli's savoury section and founder of Dos Palillos. What started as a plan for a simple tapas bar spiralled into something far more ambitious. As Raurich explains: 'We wanted to do something simple, Mediterranean and uncomplicated, but things got out of hand, and it was all our past at elBulli's fault.' The team spent three hours a week cataloguing data for the Bullipedia, applying the Bullinian method of systematised creativity to ancient cookbooks, rescuing recipes from civilisations that populated the Mediterranean coast, some dating to the Neolithic and Roman eras.
The Cuisine
The kitchen bridges ancient Mediterranean history with contemporary technique. Repsol describes it as rescuing forgotten recipe collections under contemporary codes, transforming history into a proposal with strong identity that deliberately avoids trends. The Josper grill is central, aged Galician beef txuleta, wild sea bass al pil pil, and suckling pig cheek all pass through it. Each a la carte dish comes annotated with its historical origin. Three tasting menus (€75/€85/€120) progress from conceptual tapas to whole pieces, while the Ostra Barcino and Xix Kebab are signature courses.
