The Story

En Ville pivoted to become entirely gluten-free in 2014 after its owners realised many regular diners were celiac and chose to commit the whole kitchen to safe dining. The restaurant is housed in the 1877 Casa Ramón Mumbrú on Carrer del Doctor Dou, designed by Rafael Guastavino, the Valencian architect celebrated for the tiled Catalan vault he later exported to Grand Central Terminal and other New York landmarks. The original vaulted brick ceilings are preserved in the ground-floor dining room. En Ville is accredited by the Associacio Celiacs de Catalunya, and staff receive ongoing training on food intolerances. The owners also operate Coliaki, a 100% gluten-free bakery and cafe.

The Cuisine

Chef Gustavo Espada serves Catalan market cuisine with French and Mediterranean influences, entirely 100% gluten-free with no risk of cross-contamination. The menu features buñuelos de bacalao with honey-lime emulsion, Iberico pork ribs slow-cooked for 12 hours and glazed with honey and soy, steak tartare of beef tenderloin, paella of squid and prawns, risotto de ceps with parmesan, calamares a la romana, and homemade desserts. Lactose-free, vegetarian, and vegan options are also available. Weekday lunch menu around 17 EUR. Around 30 EUR per person a la carte without drinks.

Chef Gustavo Espada leads the kitchen. Co-owner David Pelegero is one of the partners who set the direction of the restaurant, which was reshaped around safe dining for celiacs. The team also runs Coliaki, a sister gluten-free bakery and cafe.
