Estimar, meaning 'to love' in Catalan, is a collaboration between the fourth-generation Gotanegra family and Seville-born chef Rafa Zafra. Zafra forged his career at the Hacienda Benazuza: El Bulli Hotel, where he earned two Michelin stars and was a key member of Ferran and Albert Adria's team. Together with his partner Ana Gotanegra, he created a compact restaurant near the Basilica of Santa Maria del Mar dedicated to celebrating the sea. The Repsol Guide describes it as a daily solemn tribute to the ocean, where the most exuberant fish and shellfish from the port of Roses are stripped down to their essence with minimal intervention and maximum respect.
