When the elBarri group dissolved in 2020, Enigma survived as Albert's sole remaining restaurant. The Cuisine
The kitchen produces a seasonal tasting menu of approximately 20 to 25 courses, structured around product categories rather than conventional courses, sections named Almonds, Anchovies, Vegetable Garden, Mushrooms, Cheeses, and the celebrated Gamba (Prawn). Every element, lighting, furniture, shapes, materials, was conceived specifically for the restaurant.
