Albert Adrià is a Catalan chef who spent over a decade leading the pastry programme at his brother Ferran's elBulli. His Barcelona restaurant Enigma earned its second Michelin star in the 2026 guide, announced in November 2025, the long-awaited recognition he had sought for years. The 50 Best named him World's Best Pastry Chef in 2015.

Biography
Early years
Born on 20 October 1969 in the Santa Eulàlia neighbourhood of L'Hospitalet de Llobregat, just outside Barcelona, Adrià joined elBulli at sixteen in 1985. After rotating through the kitchen stations he gravitated toward pastry, going on to lead and reinvent the restaurant's dessert programme during the years his brother Ferran was rewriting modern fine dining.
Career
After leaving the daily kitchen at elBulli in the late 1990s to write 'The Desserts of El Bulli', Adrià went on to build a portfolio of his own in Barcelona — 41° (1 Michelin star), Tickets (1 star), Pakta (1 star), and Hoja Santa (1 star) among them. He earned the World's Best Pastry Chef award from The 50 Best in 2015. The pandemic forced the closure of much of his group. In 2022 he reopened Enigma Concept in Barcelona's Sant Antoni, intended as a synthesis of everything he had learned. Enigma earned its first Michelin star in 2019 (when it briefly held one in its earlier incarnation) and its second in the 2026 guide announced in November 2025 — the long-awaited recognition press described as 'finally, for Enigma.'
Philosophy
Adrià's cuisine is rooted in technique inherited from elBulli but expressed as a personal language: a constant search for surprise and 'astonishment' at the table, a 25-course menu that moves through six interconnected rooms, and a sweet-savoury continuum that reflects his pastry origins.
