The Story
Denassus opened in August 2019 on Carrer Blai in Poble-sec, the project of sommeliers Sergi Ruiz and Alejo Mailan after a decade working side by side at Bar del Pla. The name comes from a Catalan expression meaning something that is really good. The pair set out to build a gastrobar with the ingredient-driven cooking of a restaurant and the informality of a neighbourhood bar.
The Cuisine
The kitchen takes a market-led approach, leaning on stews and slow xup-xup preparations alongside sharing plates. Signatures include Peking-style duck croquettes, trinxat with perol sausage, Asturian octopus, duck magret with parsnip puree, and sirloin with foie gras and onion. Around 90 percent of the wine list comes from small producers, reflecting the founders' sommelier background and an emphasis on natural and independent bottles.
The Team
Co-founder Sergi Ruiz won Spain's Nariz de Oro in 2014, the country's top prize for sommeliers. He and Alejo Mailan, also a sommelier, run the floor and build the wine programme, while a kitchen team with decades of hospitality experience handles the cooking.
