The Story

Mercat Negre is chef Pau Navarro's market-stall project inside Mercat de l'Olivar, Palma's historic covered market (in service since 1951). Navarro, who also runs the restaurant Clandestí Taller Gastronòmic, had been buying fish for Clandestí at this market every morning for years before taking over a small stand there himself. There's no printed menu; the counter serves tapas built from whatever he and his team pick up from the market's fish stalls that day, and it's eaten standing up.

The Team

Chef Pau Navarro, born in Palma, trained at hotel schools in Palma and Girona and did a stage in fish preparation at El Celler de Can Roca before working as head chef at the Michelin-starred L'Aliança in Girona; back in Mallorca he worked in the kitchens of Andreu Genestra, Marc Fosh, Argos and Santi Taura. He co-founded the restaurant Clandestí Taller Gastronòmic with Ariadna Salvador, and runs Mercat Negre as its more casual, market-based counterpart. Food press has named Santi as the team member who runs day-to-day service at the Mercat Negre counter.
