The Market Madrid is a family-run restaurant and taberna on Calle de Clara del Rey in Prosperidad, led by cook and sommelier Jaime Anasagasti Giménez. It opened as a tiny restaurant on Príncipe de Vergara in December 2013, added a taberna here in October 2021, and brought both under one roof in January 2022. The carta mixes Spanish classics like callos and migas with tacos, tiraditos and spring rolls, it serves straight through from noon, and it's listed in the Guía Repsol.

The Story

The Market Madrid opened in December 2013 as a small restaurant at Príncipe de Vergara 202, a family project Jaime Anasagasti Giménez started with his wife: a small room so the service stays personal, and a big kitchen because the dishes take long preparations. In October 2021 they opened Taberna The Market Madrid at Clara del Rey 24, and in January 2022 the restaurant and the taberna were unified here, in premises for up to 80 people with a covered terrace, a bar area and a dining room. That lets it do both a looser taberna service and a calmer, more elegant one. It's listed in the Guía Repsol.

The Cuisine

International market cooking on a base of seasonal produce: respect for tradition, but open to recipes from other latitudes, from the Maghreb to Korea, Peru, Mexico, Japan and Bulgaria. The carta evolves with the market week by week. The taberna side is a modern take on the traditional taberna, for anything from a well-pulled beer and a pincho to a full lunch or dinner.

The Carta

To start there are gildas with anchovy, piparra and sun-dried tomato, Ibérico chorizo, cheese from the Sierra de Madrid, pickled mussels with crisps, marineras including a Mexican one with boquerón and pickled jalapeño, and croquetas of cecina and leek. Then a salmon tiradito with ají amarillo, avocado cream and black-garlic mayonnaise, a carpaccio of Ibérico presa with parmesan and mustard sorbet, burrata with pickled shiitake, a Murcian ensaladilla with Santoña anchovies, hummus with boquerones, chicken tinga and cochinita pibil tacos, and Thai vegetable spring rolls. Bigger plates include spinach-pasta cannelloni with aubergine and pesto béchamel, Extremaduran migas with a fried egg, callos a la madrileña, a creamy squid-ink rice with spring-garlic aioli, and flank steak from the Sierra de Guadarrama with patatas revolconas. Several come as half or full portions.

Desserts and Events

Desserts are made in house and run about €6.75: coffee panna cotta with hazelnut nougatine and coffee ice cream, passion-fruit parfait with red berries, sticky toffee pudding with banana ice cream, and a long-running basil sponge with candied cherry tomatoes and olive-oil sorbet. Service runs without a break from 12:00 to close, Tuesday to Saturday, which suits long lunches, and the space takes private events for up to 80, standing or seated, with menus built to your budget and dietary needs.

The Team

Jaime Anasagasti Giménez is a Madrid cook who started out in the city's traditional mesones and tabernas, studied tourism, and qualified as a sommelier at the Cámara de Comercio, which led him to La Taberna del Alabardero in Madrid and then in Seattle and Washington DC. In Seattle he also managed Mistral Kitchen, William Belickis's restaurant, where diners could design their own tasting menu, and back in Madrid he spent a short time at Abraham García's Viridiana before opening The Market. He still chooses the wines himself, looking for producers away from passing trends. His wife is Mexican, which is where the chicken tinga tacos come from.
