Jaime Anasagasti Giménez began his career young in traditional Madrid taverns, later working at Viridiana and La Taberna del Alabardero in Madrid, then in Washington DC and at Mistral Kitchen in Seattle. He opened the original The Market Madrid on Calle Príncipe de Vergara in December 2013, and in October 2021 added its more casual sibling, Taberna The Market Madrid, on Calle de Clara del Rey in the Prosperidad neighbourhood, where he also curates the wine list himself.
